- Stir it well and transfer this to a 2 quart glass mason jar with a tight fitting lid on it.
- Place the lid on it and leave it on for 2 – 3 days till the carbonated and transfer it to the fridge.
- Remember that use of whey will cause it to ferment more quickly and this will take less time. Also it should be bubble and hiss like a soda when you open the lid of the container. This depends on the strength of the culture or the temperature of your house or the sugar added to it.
- The mixture finally should smell like ginger and slightly has yeast/ fermentation and should be fizzy. But make sure that it should not be too carbonated as this will cause too much of pressure and finally result in exploding jar.

- Chill this liquid by placing over the ice and set it in the refrigerator, uncovered, till at least room temperature 68 – 72˚F.
- Then use a funnel and pour this solution into a clean 2 liter plastic bottle and then add 1/8 teaspoon of active dry yeast, 2 tablespoons of freshly squeezed lemon juice and 7 cups of water in it.
